The company makes 100% natural ice cream and among the over 50 varieties of ice cream - ranging from vanilla and chocolate, to orange vanilla, black sesame, wasabi and nalengur. Anuvrat Pabrai, founder, Pabrai's Fresh and Naturelle Ice Cream, shares his thoughts about take-home ice cream and impulse buy, sugar-free, dairy-free, vegan ice cream, future collaboration and more, in an email interview with Kimberley Fernandes. Excerpts: Tell us about the difference in sales with regard to take-home ice cream and impulse buy ice creams. As the name suggests, impulse buying is spur of the moment purchase. This is usually just because you have seen the product or have access to it or you have seen an ad of the product and want to buy it. Its unplanned spur of the moment buying. Take away on the other hand is usually a planned purchase which is usually for a family or a group function wherein a planned menu results in someone ordering online. Having said that, a Take Away may also be bought on an impulse or one may buy a Take Away pack on impulse.   Do you see an uptick in manufacturing and supplying of dairy-free/vegan ice cream, why? Both dairy-free and vegan categories are very niche segments. While there may be a small increase on account of awareness and curiosity in both categories, we do not see a significant growth in both categories. Having said that, the category of sugar-free products, including ice creams has seen a very significant growth which got a fair jump in pandemic as people became conscious of their health. Bakery and dessert inspired indulgent flavours like birthday cake are increasing in popularity. Elaborate. Birthday cakes are a must for birthdays. Have always been and will hopefully continue to be. Most people turn to ice cream as an indulgent food to give themselves a treat as well as to relieve stress. Elaborate. It is true that ice cream has for long been treated as an indulgence. The fact that it has sugar and is cold adds to the indulgence. There is no doubt in my mind that eating ice cream reduces stress. The sheer act of indulging in a sweet and cold ice cream sets the mind at rest, relieves your stress and makes you feel better and more energetic. What is the company’s long-term plan for sustainability? We are working towards reducing dependence on environmentally damaging products and services. We are working on our new factory where we will be using solar heating and solar power for lighting. We will be recycling our waste water for reuse in plant for gardening, washing and cleaning in production areas. In the long-term, we want to be carbon-neutral which is a very decisive step and policy statement that we are proposing to incorporate in our values.   What are the key factors that would differentiate your brand from the existing brands in the market? We are a 100% natural ice cream brand which uses no artificial essences and no artificial colours in our products. There are a lot of companies which are making natural ice creams but we are perhaps one of the very few who do not use any artificial colours. We also work very hard to ensure that we use 100% natural raw materials. For instance, we are probably the only company in India which uses naturally processed cocoa as against alkalised cocoa used by other manufacturers. What are the company’s plans for future collaborations? We are planning a major expansion in view of post-Covid surge in demand. Having multiple stores in locations like Kolkata, Howrah, Kalyani, Bangalore, Chennai, Vijayawada, Bhubaneshwar, Dhanbad, Indore as well as cloud operations in cities like Delhi, Ahmedabad, and Mumbai, the exotic and exclusive ice cream maker planning to open 14 stores in 7 cities and restart retail parlours stores and cloud services will take the total number of stores to over 50 across the country. The expansion also entails setting up a new state-of-the-art production facility capable of making 1 million litre of ice cream per annum to cope with the expansion of the retail footprint of our company. Do you plan on launching new products in light of the changing trends in the industry?
